Food habits in ayurveda

Dear Doctor: Dear Sir,

in Ayurveda, is it good/advisable to cook fruit? (stew or lightly steam?) And bananas in particular?
I have always read that it is recommended for Vata to cook fruit, with recipes for stewed fruit, steamed bananas with ghee and cardamom, etc. But I have recently heard the view that fruit not should be cooked, except in certain exceptional situations.
I would be grateful to hear what you would have to say on this question - is it ok to lightly steam or cook fruit? (I am Vata)
Thank you in advance and have a great day,
Aaron
